Chipotle Basmati Rice

I have had an addiction to Chipotle Mexican Grill for a while now.  I haven't been able to quite figure out what makes me crave the delicious burritos but I know I love the rice!

If you are tired of the same old white rice and need a pick you up for your dinner try this recipe.



What you need:

1 teaspoon vegetable oil or butter
2 tsp. fresh cilantro
*2/3 cup white basmati rice
1 cup water
1/2 teaspoon salt
1 Lime

* A little note about the rice.  Try looking at a Whole Foods store or a specialty market for the Basmati rice!

Saute the rice in oil until you can almost see through it.   (think of Rice a Roni).

Next add water and bring to a rapid boil

Turn the heat down low when the water begins to boil.

Simmer, covered for 15-20 minutes, or until all water is absorbed.

VERY IMPORTANT

Turn off heat. Leave it covered for 30 minutes. Do not open the lid!  Let the rice steam so it will be fluffy.

Next, remove lid, let some of the steam out. Try to transfer rice into a mixing bowl for the next step.

Mix salt and juice of key lime together until salt is dissolved.

Pour it over rice, fluff with a fork.

Sprinkle in cilantro, and toss well to evenly coat with cilantro and lime mixture.
